Weekend Recap and Monday Monday!!

Happy Monday, Everyone!!  Hope you had a super weekend!  I had a pretty eventful one myself. :)  Thursday night I went back for another taste of All-University Sing and I just want to give a shout out to all who took part in this year's production.  It was fabulous!!  Thanks for all your hard work!
Friday morning I began my day at the wonderful Panera.  I spotted a new bagel in their bakery bins and just had to try a taste.  It is called a trail mix bagel and as someone who is a fan of trail mix, I loved the bagel form!  It was so nice to sit in an armchair next to the little fireplace, as Friday had just a tinge of chill in the air, to enjoy my cup of hot hazelnut coffee.
After work, I found this little happy surprise in my mailbox!!  I cannot wait to soak up every last bit of design delight within its pages.  Thanks, Dad! :)
After my happy mailbox find, I packed up my bags to housesit and watch out for a precious black lab.  She was so sweet and since I would love to have a dog, it was fun to have a little dogsitting experience!
One of my favorite things was our walks in the morning and look what we happened upon early Saturday:

Yes, a group of deer just staring at us like they were statues.  So beautiful.  It was such a treat to get to experience a little of nature that is rare in my day to day life.

I tried to capture another picture as we would get just close enough for them to run away.  They ran so gracefully!

Then, when we returned back by where we had seen them the first time, there they were again!

I also spend some quality time with this little book and learned lots about some famous sites in Israel. :)
Saturday afternoon, I met my friend Adriel to go visit our adopted grandmother through our church.  We had such a lovely visit.  I just love hearing about people's experiences and our adopted grandmother was so precious to share some her life with us.
Then, in between homework assignments, I checked the Baylor in-game blog to keep up with the men's basketball game against A&M.  The Aggies definitely played a great game, but at the final buzzer the Bears were on top 58-51.  Go Bears!!
Sunday, after a great morning at church, I continued with school work and watched the Lady Bears game.  They played OU and boy was it a nailbiter.  I listened in the car until I had to get out for our evening service to hear my friend preach.  There had been 3 minutes left in the game when I turned it off and we were behind by three.  With great trepidation, I checked the score when church was over and we had won by 1 point!!!  Way to go, Lady Bears!

This morning, I had this beautiful view out my window!  Isn't that tree gorgeous?!  Spring is on its way!

Look what else arrived on Friday -- my Vera Totally Turq Miller bag.  So excited to have this new bag for travel!!  It zips and has all these great interior pockets!  Love the help with organization! :)
Then, after work today, I got this little phone activated.  Yes, I am now a part of the Droid family!  I was so excited to see there was a Blogger app, but for some reason it will only connect with a brand new gmail address I had to put together today and that is not what my blogger log-in email is.  If anyone knows how to change this, I would love to know, so I can start blogging from my phone, too!!  But, since I'm sure you are all wondering, I do now have a blog-specific email: chroniclesofcarroll@gmail.com. Feel free to drop me a line! :)

And finally, this morning I'm afraid I might have needed to heed Chanel's advice of taking off one accessory before you walk out the door, but I couldn't resist either my flower headband or the flower on my necklace, so I wore both!  I think Mondays may call for a little extra accessory!  Hope you all had a great start to your week!! :)

Siesta Scripture Memory

I'm a little delayed on the post for the 15th of the month, but better late than never, right?!  For the fourth verse of the year, I chose one from Hebrews:

"Let us therefore make every effort to enter that rest, so that no one may fall through such disobedience as theirs." Hebrews 4:11

Before this scripture, the writer is speaking of how God rested and how the Sabbath rest is for us.  This verse reminds me how important taking time to rest is.  In fact, it reminds me of the book we are reading in my Covenant Group:
In this book, Smith walks us through different spiritual disciplines and the first one is rest!  When we are fully rested, then we are able to fully minister to those around us.
Hope you all had a nice Monday!

Weekend Recap

Hi Friends!!  Hope you all have enjoyed your weekends.  I was blessed this weekend to attend the Women's Retreat at my church on Friday evening and Saturday morning.  Not only was it a joy to spend time with precious sisters in Christ, but I got to reconnect with a friend who used to live in my hometown and she was our speaker!  It was such a blessing to hear Sherrie bring a word from the Lord.  I left feeling challenged and encouraged.  It was also so fun to get to spend time with my friend Kathleen!
Here we are at the retreat. :)

After the retreat, I had lunch with some fabulous friends and spent the rest of the day working on school assignments to prepare for the week ahead...I may or may not have also been listening to the Men's and Women's Baylor basketball games at the same time -- a girl's gotta work on her multitasking skills, right?! :)

Today, I was blessed to spend the morning at church and this afternoon I splurged and made this little delicacy!  It is called Chocolate Chip Cookie Pie and I found the recipe here via my friend Amy.  I haven't tried it yet, but my mouth is watering just looking at this picture, so I might have to have a bite soon!
Hope you enjoy the rest of your Sunday evening and have a fabulous week!!

Pink Out!!

Hi Friends!
Sorry I have been a little MIA from the blog.  This week was a busy one!!  My studies kept me on my toes and before I knew it, it was Club Night for Sing!  Baylor hosts All-University Sing every year and each group that enters puts together a 7 minute mini Broadway-like musical revue and this year definitely did not disappoint!!    I had the most wonderful time and am looking forward to watching it all again next week!

When last we spoke, I was headed to the Pink Out game between the Lady Bears and the Aggies and what a game it was!  Two of my good friends, Erin and Ashley, and I enjoyed a fun dinner at Elite and then headed to the Ferrell.
Erin, me and Ashley
It was a close game the entire time and I was on pins and needles!  Carroll stressed = lots of cheering!  They even gave us cute pink and green poms to shake -- so fun!

At the buzzer, the Lady Bears had another victory.  Here's the scoreboard with the final.
We had such a fun (though stressful) time!  Can't wait for the next game!! :)

Dallas Daytrip!

Hi Friends!
Hope you all have had a fabulous weekend!  I took a fun day trip to Dallas on Saturday and can't wait to share about the fun I had!!  But before I get to the day trip, I must tell you about this wonderful Masterpiece Classics miniseries I happened upon called Downton Abbey.  It is so interesting and is set in 1914.  In fact, the series begins the day after the sinking of the Titanic.

I highly recommend a visit to Downton Abbey.  I haven't finished watching all of the programs yet, but what I have watched so far has been riveting!!

Now, onto the Dallas trip!  I met my mom and Muvie in Big D for lunch and we ate at the most fabulous restaurant called Rise No. 1.   The main feature of the menu is souffles and we thoroughly enjoyed ourselves!

Here is Muvie at the beginning of our adventure.  The restaurant is decorated in a lovely French style and is just so warm and cozy!

Here's a glimpse of the menu!  There were so many tasty options, that I had quite a difficult time making a selection.

I finally decided on the blue crab souffle and it did not disappoint!  The flavor of the crab was perfectly accented with red pepper and cheese.

Then, we splurged and order sweet souffles!  This one is Mom's hazlenut souffle.  Isn't it beautiful?!

I ordered the bread pudding souffle and it was fantastic.  Muvie tried the Grand Marnier souffle.  Of course, we all shared with each other and I thought all of the souffles were fabulous!

As you leave, they give you a thought for the day to take with you!  Isn't that sweet?!

As if that wasn't enough, I have personally been craving macarons for months and had read about a bakery in Dallas that makes them.  I looked the bakery up and they happened to be just down the street from Rise, so we popped by Tart bakery and I ran in to get a little sampler of treats! :)  Of course, I was still full from lunch, so I didn't open my treats until this afternoon when I tried the chocolate one and it was wonderful!!

Next on the list was an adorable knitting shop in Plano called the Woolie Ewe.  They have tons of yarn and pattern books and in the middle of the store are sitting areas where you can meet some friends for a little knitting party!  Last Christmas, Muvie taught me how to knit and I haven't gotten back into it for awhile, but this trip really inspired me to get my little knitting start back out and work on it.

Here Mom and I were waiting in the car for Muvie.  Muvie bought some yarn and they have this really great machine that will wind your skeins of yarn into a ball of yarn much more quickly than if you were to do it yourself.  A nice added bonus!

After a little trip to Northpark (we all know a trip to Dallas wouldn't be complete without a little visit here :), I met my friend Lindsey at one of our absolute favorites, Cantina Laredo!!
Yes, this is the tableside guacamole that they make.  It is so good...I may or may not dream about this wonderful delight sometimes. :)

It was so good to catch up with this dear friend!!
Happy Sunday, friends!  Hope you each have a wonderful week ahead!! :)
