This morning I ate something new and different for breakfast: blueberry muffins made with almond flour and they were so yummy and filling! An added bonus was they were very easy to make. :)
I'm still doing the 30 day Paleo challenge and when I saw that the breakfast choices this morning included an option for paleo-friendly blueberry muffins, I couldn't find the recipe fast enough!
The ingredients are pretty simple:
almond flour, blueberries, pure raw honey, eggs, baking soda, salt, and vanilla extract.

Then, for the rest of the day today, I couldn't wait to get home and eat leftovers from last night's dinner!!
This meal has to be one of my favorites. It is so yummy and so easy, too!
Again, the indredients are simple:
spaghetti squash, marinara, and italian seasoned ground turkey
I also put a little olive oil, salt and pepper on the spaghettii squash before I roasted it. The most difficult part of this dish is cutting the spaghetti squash in half! Thank goodness G was up for the challenge. :)
I couldn't believe how much squash was in just half of the spaghetti squash. G and I split a half and shared the other half for dinner tonight. And you can see from my plate that our portions were not stingy! ;)
While the spaghetti squash is cooking, I brown up the ground turkey in a little bit of olive oil, then add a jar of marinara and let it simmer for a little bit. It is the perfect savory topping for your spaghetti squash.
